■”Takumen.com” Ramen Category
Based on over 400 varieties of ramen sold on Takumen.com between October 1, 2024, and September 30, 2025, rankings were determined across multiple categories. The Grand Awards winners are:
Overall Grand Award (Hall of Fame):
“Miso Ramen” – Oshima (Edogawa, Tokyo)
A truly authentic Sapporo-style miso ramen crafted by a chef who trained for 12 years at Sumire, one of Sapporo’s most iconic miso ramen restaurants. The rich, full-bodied broth is slowly simmered with pork bones and vegetables, then enhanced with bold notes of ginger and garlic. Its depth and natural sweetness pair perfectly with the medium-thick, wavy egg noodles specially sourced from a Sapporo noodle maker. This is a bowl loved by all generations.

Newcomer Grand Award:
“Konbusui Tsukemen (Oyster Shio)” – Menya Suzuharu(Bunkyo,Tokyo)

Ramen Grand Award:
“Yami Chuka” – Chuka Soba Ibuki(Itabashi, Tokyo)
Originally served only to regulars and as a staff meal, this special bowl of chuka soba—known as “Yami Chuka”(“Secret Chuka”)—has finally been made available to the public. Unlike the standard chuka soba, this version features a luxuriously smooth and ultra-creamy broth, enriched with the deep umami of pork that melts into the soup. Of course, the signature niboshi (dried sardine) flavor remains exceptional.
Although the chef is typically reluctant to offer variations that could alter the original taste, the superb compatibility of this recipe with freezing led to its limited release. From Chuka Soba Ibuki, often called the holy ground of niboshi ramen, master chef Mimura, one of Japan’s foremost niboshi artisans, presents this truly sublime bowl.
Enjoy a masterpiece crafted by a true leader in Japan’s niboshi ramen world.

Tsukemen Grand Award:
“Rich Seafood Tsukemen” – Menya Itto (Katsushika, Tokyo)
This specialty tsukemen features a rich chicken paitan broth blended with five types of seafood and shellfish, simmered down to an ultra-concentrated, deeply flavorful soup. A hint of mayonnaise adds a gentle acidity and smooth richness that rounds out the taste.
The chicken meatballs offer a delightful contrast—their fluffy texture accented by pleasantly crunchy cartilage. The thick, chewy noodles are packed with the aroma of wheat, revealing more flavor with every bite, and stand up perfectly to the intensely rich dipping broth.
